Snacks On The Go - Our Top 3 Energy Balls

If you're a snacker like me (and really, the whole Stoke team!), then no doubt you love a good raw energy ball. These bite-sized snacks are the perfect size to satiate those 3pm hunger pains, while being so healthy you don't have to feel guilty.

 

These are my three favourite recipes - give them a go and see what you prefer!

*Each recipe makes about 20 raw balls, so modify amounts as needed.

 

1. MIXED SPICE

Ingredients  

  • 200 grams medjool dates

  • 1/2 cup Raw Almonds

  • 1 TBSP Coconut Oil

  • 1/4 cup Buckwheat

  • 1/4 Cup Cranberries

  • 1 TBSP Mixed Spices

Method

  1. Blend the almonds, dates & coconut oil in a high powered blender, food processor or Thermomix.

  2. Add in buckwheat, cranberries & mixed spice, and blend on a low speed (you mainly just want to mix those ingredients in).

  3. Once blended, remove from blender and roll into small balls.

  4. Store in the freezer, and they are ready to go!

 

2. ALMOND PEANUT SURPRISE

Ingredients  

  • 200 grams medjool dates

  • 1/2 cup Raw Almonds

  • 1 TBSP Coconut Oil

  • 1/2 TBSP Cinnamon

  • 1/4 cup peanut butter (bought, or freshly made)

Method

  1. Blend the almonds, dates, cinnamon & coconut oil in a high powered blender, food processor or Thermomix.

  2. Once blended, remove from blender and roll into half sized small balls (roughly 40).

  3. Press thumb into one of the balls to make a groove, add in a small dollop of peanut butter (to form the centre!).

  4. Cover with a second small ball to form one larger raw ball, with the peanut butter in the centre.

  5. Continue with the rest of the mixture until you have about 20 peanut-butter-filled raw balls.

  6. These are ideal to have at fridge temperature, so the peanut butter goes soft in the centre again. If you're not eating them within a few days, store in the freezer then move them into the fridge when you wish to eat them

 

3. CHOC GOJI BOUNTY BALLS (Pictured)

Ingredients  

  • 200 grams medjool dates

  • 1/2 cup Raw Almonds

  • 1 TBSP Coconut Oil

  • 1 TBSP Cacao

  • 1/4 Cup Dried Goji Berries

  • 1/2 cup dessicated coconut

Method

  1. Blend the almonds, dates, cacao & coconut oil in a high powered blender, food processor or Thermomix. The more you blend, the more fudge-like these will become!

  2. Add in goji berries and blend on a low speed (you mainly just want to mix them in).

  3. Once blended, remove from blender and roll into small balls.

  4. Put dessicated coconut into a bowl, and roll each ball in the coconut to cover

  5. Store in freezer, and they are ready to go!
