This recipe comes courtesy of Kate's mum, Margaret - an avid lover of Pilates and getting creative in the kitchen. When she bought in a batch of her latest creation, these delicious energy bars, we knew we had to get the recipe to share with you!
1 tbsp chia seeds
1/4 cup water
1/2 cup rice bran syrup
1/2 cup olive oil
1/2 tsp mixed spice
1/2 tsp cinnamon
1 cup quinoa flakes
3/4 cup rolled oats (or 1/2 cup rolled oats, 1/4 cup flaxseeds)
1/2 cup shredded coconut
1 1/2 cup raw nut/fruit mix of your choice
Preheat oven to 175 degrees Celsius
Place chia seeds in small bowl with water, mix and let stand for 10 minutes until chia seeds for a gel-like consistency
Place rice bran syrup, oil and spices in small saucepan and heat until warm and runny
In a large bowl mix together quinoa flakes, oats (and flaxseeds if using!), raw nuts and fruit
Add chia seed to rice bran syrup mix and whisk to combine
Pour rice bran mix into dry mixture and combine well (if it seems a bit dry, add a small amount of water!)
Line a 30cm deep, shallow tray with baking paper
Add mixture and press with the back of a spoon to flatten
Bake for 35 minutes
Allow to cool completely in the tray, and then cut into 12 bars when cool (cut before removing from tray!)
Store in an airtight container for up to 7 days!
